Cerro la Barca, Vegas Altas Ancestral (2016)
Sourced from a local grower with more than 60 varieties planted. Grapes are destemmed and put into an open stainless steel vat where the must is extracted and pressed by it's own weight. Super low yields at about 48%. Bottled using the "método ancestral" and aged for about 1 year before disgorging.
